PB1 wine is steeped in a philosophy of producing only premium quality appellation wines for truly outstanding value, harvesting intense flavoured fruit drawing on exceptional winemaking skills.
Winemaker’s Tasting Notes:
The fruits from these old bush vines, which are some of the oldest in the world, are cropped at 1 tonne to the acre and results in intense flavours rarely found. Harvested at 13.8 baume, and fermented in small 4 tonne open fermenters, the cap was managed by hand plunging and also by pumping over to extract maximum colour and flavour.
Fermentation lasted 10 days and left on skins another 20 days to help extract the fine long grained tannins and structure. Aged in new French Oak hogsheads. The bouquet is complex, with sweet cabernet fruit, violets, spice and black fruits. The palate has great cedar and oak spice, fruit intensity and length. Very fine long tannin and balanced acidity.
